New Mexican Fiesta for three
A number of months ago, Dave brought home some fresh New Mexico green chile. We have had it in the freezer for a while and decided to pull it out and do something with it. On Saturday night, we roasted and peeled the chiles and then made blue corn chicken enchiladas. We made homemade guacamole and salsa as well. As we plated the enchiladas, I placed an egg over-easy on top. Complete New Mexican style! Megan joined us and we had a wonderful evening together. I remembered to take a picture of the salsa and guac, as well as my husband and Megs, but unfortunately, forgot to take a picture of the final product of the enchiladas. I guess I was just too dang hungry!
